In the Marche, macaroni are a striped pasta in the shape of a tube, together with spaghetti the one most linked to tradition, the same one that mom used to cook for us back from school. Unbeatable with any type of sauce, that slips inside them and embraces them in the numerous streaks.

Regina dei Sibillini is a farm in Montefortino (Stop – Market) which produces pasta using only durum wheat from its land in the Sibillini Mountains. A rare choice, that of durum wheat in a mountain environment, which together with direct cultivation and artisanal processing methods, allows you to create unique and high quality products. Regina dei Sibillini's philosophy is to cultivate and transform, to bring all the goodness that is in the mountains into pasta: the water, the air, the tradition of doing things with care. The cultivation of durum wheat in the mountains requires great attention and is made difficult by the climate, less favorable than the hilly one and characterized by frequent temperature changes and spring frosts.
On their land they grow only late durum wheat, sown in late October. The snow, which falls between November and March, it covers it protecting it from frosts and hydrates it slowly.
It is the link with the territory they live in, they have always loved and respected, which prompted them to take this path. The nature that surrounds them is a source of inspiration every day and there is no better way to honor it than to try to capture its flavors, perfumes, colors. The pasta factory logo also takes shape from here, on which the Prioress stands out, called the Queen of the Sibillini, the top that falls within the territory of Montefortino. The mountain is the hub of everything, their idea comes from her.
Respect for the territory, the will to improve and promote it, but also the awareness of the need to know where what we eat comes from, prompted them to join a micro-chain project. It is a short supply chain that brings together several farms located in the area of ​​the Sibillini Mountains, up to the mill that takes care of the grinding. It is then the same Queen of the Sibillini to take care of its transformation into pasta.
Regina dei Sibillini produces pasta according to the artisanal method: bronze drawing and drying at low temperatures, using only wheat from mountain land between 600 e 900 meters above sea level.
The cultivated raw material, healthy and unique in its properties, it gives the transformed product a characteristic flavor rich in aromas and a scent that is distinguished already at the time of cooking.
