Valerie Frison cultivate 6 hectares of vineyards a Town on Arce, a small village located in the Côtes des Bar, in the extreme south of the region of Champagne. About the 93% of the vineyards is cultivated in Pinot Noir, while the remainder was destined for the Chardonnay. The importance of respecting and preserving these splendid ones terroir, they brought Valerie(Val) to one organic viticulture since 2003: “We hold the vines with great care so that they can express the typicality of the terroir and the distinctive characteristics of each vintage ". The harvests take place "late", calendar speaking, because carried out exclusively at optimal ripeness; in the cellar there is no type of assembly with grapes from other vintages; fermentation and malolactic take place spontaneously on its own yeasts in wood and no dosage is added to the disgorgement.
The GOUSTAN è uno champagne Blanc de Noirs Brut Nature. Vinified for 6 months in used barriques, passes the next ones 19/22 months in bottle refermentation that make it elegant, fine with a long persistent and mineral finish. Get into your thin mouth and then start elbowing. Intriguing!
