Description
Bolero Extra Brut 2008, Maison Fleury
In 1989, first overall among Champagne winemakers, Jean-Pierre Fleury converts the company to biodynamics. The Fleury fashion house can boast the supremacy in many things. They were the first to adopt the free foot in the Aube after the devastation of the phylloxera. The first to take a step back, in the eighties, on the path of chemistry to take a different path to seek quality, biodynamics. In the basement, fermentations are triggered with selected yeasts, but with their vineyard yeasts raised and selected by them, therefore "selected autochthonous yeasts".
